Ingredients:
- 4 oz Little Leaf Farms Baby Crispy Green Leaf Lettuce
- 8 oz Cabot Vermont Sharp Cheddar Cheese, cut into ¼” cubes
- 1.50 cups corn, cut from 2 cobs*
- 1 cup grape tomatoes, halved
- 15 oz can chickpeas, rinsed and drained
- 2 cups quinoa, cooked and cooled (from about ⅓ cup dry)
- ½ cup of your favorite vinaigrette
