The good folks at Whole Foods are teaching us how to make Guacamole Inspired Cod en Papillote. Enjoy it for yourself and use the recipe below!

Guacamole Inspired Cod en Papillote
1/3 pound wild cod
¼ teaspoon Citrus Borsari
¼ teaspoon each lemon and lime zest
½ ripe avocado, thinly sliced lengthwise
¼ cup salsa fresca
2 teaspoons extra virgin olive oil
Squeeze of lime juice
¼ teaspoon ground cumin
1 tablespoon cilantro leaves
Pinch kosher salt

Sprinkle cod with lime zest, lemon zest, citrus borsari, and top with salsa fresca.
Drizzle with 2 teaspoons extra virgin olive oil, fan avocado slices on top, add a pinch kosher salt, cumin, and a squeeze of lime juice over the avocado.
Fold parchment paper around cod to create a pouch, and cook in oven at 400 degrees for 14 – 16 minutes.
Open pouch, sprinkle with cilantro leaves and enjoy!
