Who doesn’t love pizza? In this weekend’s Dish Delish, Whole Foods East Coast Culinary Coordinator, Geoff Gardner, is making a healthy and delicious Mediterranean Flatbread. Watch the video above and learn how to make this yourself! Plus, find the recipe below for easy prep!

INGREDIENTS
Prepared grilled pizza crust
¼ small sweet onion, thinly sliced into half moons
1 bunch asparagus, woody ends removed
½ teaspoon plus a pinch of kosher salt
1 teaspoon plus 1 tablespoon extra virgin olive oil
7 Baby bella/Cremini mushrooms, thinly sliced
¼ cup hummus
¼ cup pitted Kalamata olives, sliced in half
1 fire roasted bell pepper, sliced into strips
1.5oz goat cheese crumbles

DIRECTIONS
Heat oven to 450 degrees.
On a sheet pan, toss asparagus with 1 tablespoon olive oil and 1/4 teaspoon salt, roast for 10 minutes or until tender but still green.
Set aside. Leave oven on.

Add 1 teaspoon of olive oil to a saute pan, add onions and mushrooms, saute 4 – 6 minutes until onions are translucent, and mushrooms soften, set aside.
Smear hummus over top of flatbread, scatter mushrooms and onions on top.
Then top evenly with olives, red peppers, and goat cheese.
Chop the asparagus and sprinkle over the top of the pizza.
Bake at 450 for 20 minutes, transfer to cutting board, cut into wedges and serve.
