Ming Tsai knows his way around a kitchen.

The renowned chef, who owns several restaurants including Blue Ginger and Blue Dragon, proved that on this week’s episode of “Dining Playbook.” Joining Billy Costa at the Boston Center for Adult Education, Tsai whipped up some delicious smashed shrimp shumai.
